Closing down part of business

We are mostly a plumbing shop and expanded into HVAC due to customer requests for it. Our HVAC tech resigned and now we are wondering if it's possible to quit that side of the business, and how. Has anyone else successfully eliminated part of their business and can you offer advice if we go that route? The night and weekend calls are a much bigger PITA for HVAC than heating and there is such a lack of techs coming into the field it looks to be an uphill battle to stay staffed.
